15 CBD DESSERT RECIPES – COOKING WITH CBD

INTRODUCTION

As many states all over the world now legalize the production and use of cannabis particularly, medical cannabis, the interest around CBD is now on the rise. We now have CBD served up in different forms of pills, creams, tincture, oils, and food & beverages.

What is CBD? CBD is the short form of Cannabidiol. It is one of the major chemical compounds that are found in the cannabis plant or hemp plant. The other major chemical compound is THC which stands for Tetrahydrocannabinol. The basic difference between these two major chemical compounds is that CBD on one hand is a non-intoxicating compound, while THC on the other hand, is an intoxicating chemical compound in marijuana that makes you “high.”

CBD desserts are dessert foods that have been infused with some doses of CBD. As stated earlier, CBD won’t make you high. Rather, the consumption of CBD-infused meals (desserts) can help you feel less anxious. It can serve as a pain reliever. It can also promote healthy sleep. It can equally fight inflammation. These are some of the health benefits of using CBD.

This cookbook examines the meaning of CBD and some of the health benefits of consuming CBD-infused desserts.

Now let’s look at 15 quick and easy CBD desserts.

Ingredients

For the Cake

  • 1 1/2 cups all-purpose flour
  • 1 cup coconut sugar
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1 1/2 teaspoons JustCBD CBD oil

  • 1 tablespoon pure vanilla extract
  • 1/4 cup + 2 tablespoons pineapple juice at room temp.
  • 2 tablespoons apple cider vinegar
  • 1/2 cup chopped pineapple
  • 1/3 cup chopped pecans

For the Frosting

  • 2 (15-oz) cans full-fat coconut milk, chilled
  • 2 cups raw cashews, soaked for 4 hours and drained
  • 3/4 cup raw coconut nectar, or maple syrup
  • 1/2 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon juice
  • 1 3/4 cups coconut butter, warmed to liquid

Instructions

Preheat the oven to 176 C and position rack in the oven. Line two 6-inch-diameter cake pans with 2-inch-high sides with parchment paper.

Coat parchment paper and pan sides with coconut oil and line the bottom of the pan with a piece of parchment fit to the pan.

Whisk the flour, baking soda, salt, cinnamon, and sugar in a large bowl to blend well.

Whisk banana, oil, pineapple juice, CBD, and vanilla in another bowl.

Whisk the wet mixture into the dry mixture until well blended. Stir in the cider vinegar until bubbles form.

Mix in the pineapple and pecans.

Transfer batter to prepared pans and bake for 25 minutes or until a toothpick inserted into the centre comes out clean.

Cool cakes completely in the pan on a rack. Cut around sides of pan to loosen. Turn cakes out onto a platter, peel off the parchment paper. Let cool completely, and then place in the fridge to chill until very cold making slicing easier. When chilled, slice cakes horizontally in half so that you have 4 layers.

Meanwhile, to make the frosting, combine all the ingredients but the coconut butter in a high-speed blender and process until smooth. With the motor still running, add the coconut butter and process a minute more. Pour the frosting into a bowl and let it sit in the freezer for at least 30 minutes or until the consistency of whipped cream.

When ready to frost, place one cake on a plate. Spread frosting about 1/2 inch thick over the first layer of the cake, and then top with the second. Repeat the frosting, then another cake layer, then more frosting, and then the last layer. Spread frosting over the top and down the sides of the cake.

Garnish the cake with chopped pecans. Serve and have fun!

Store any leftover cake in the refrigerator.
